They are essentially the same thing, just phonetically differently, referring to the area in central China, that is well-known for yummy cuisine, among other things. Szechuan is the traditional popular way among westerners. Sichuan is a Roman Pinyin phonetic system that is widely adopted in mainland China.

This is one of my go-to packed school lunch ideas these days for my kids.

I would make the Sichuan dressing in advance, and store it in a glass bowl in the refrigerator. I would also cook some spaghetti in advance and store it too in the refrigerator. By the way, the organic spaghetti works great for a Sichuan-style noodle salad.

In the morning, I would just mix the dressing with the cooked spaghetti in a heated hard-anodized fry pan, along with some chopped vegetables.

Tip No. 1 is to use fresh Sichuan pepper and Sichuan Chili Powder for an authentic Szechuan Style Dressing

The freshness of the Sichuan pepper and Sichuan Chili Powder makes a huge difference in terms of the taste. Luckily, nowadays you can get the quality ones fairly easily.

For Sichuan pepper, I recommend getting the quality Sichuan peppercorns and then grinding them into powder using a spice grinder in tiny batches as you use them. Sichuan peppercorns, known as “Hua Jiao” {花椒} in Chinese, have a unique sensational flavor and taste, the iconic flavor behind classic Sichuan dishes such as Kung Pao Chicken.

The fresh Sichuan chili powder has this beautiful shiny red color, which gives the Sichuan Dressing an appetizing red hue.

Tip No.2 is to use sesame oil to bring out the natural yumminess

Sesame oil perhaps is one of the tastiest oil which also boasts superb health benefits.

  • They are high in antioxidants, essential substances that help our bodies to fight off free radicals, and all sorts of inflammations.
  • Sesame oil is also rich in omega-6 fatty acids, a type of unsaturated fat. Unsaturated fat is excellent for heart health.
  • You can also use sesame oil topically to help heal wounds and burns.
  • I use sesame oil as a pulling oil to rinse my mouth every morning. It helps remove bacteria.

Ingredients

  • 3 tbsp light soy sauce
  • 2 tbsp Zhenjiang vinegar
  • 2.5 tbsp sesame oil
  • 1/2 tsp Himalayan pink salt
  • 1 tsp cane sugar, organic unrefined preferred
  • 1/2 tsp Sichuan pepper powder, freshly ground
  • 1/2 tsp Sichuan chili powder, fresh

Instructions

  • Gather ingredients.

  • Add soy sauce, Zhenjiang vinegar, and sesame oil into a small bowl, and then add salt, sugar, Sichuan pepper powder, and Sichuan chili powder. Whisk well until fully blended.
