Shanghai Soup Dumplings {Xiao Long Bao 小笼包} is one of the classic Huai Yang Style food. It is something between buns {Bao Zi} and dumplings {Jiao Zi}. They are well-liked breakfast dish in China native to the Yangtze River Delta area. Like I said, Shanghai Soup Dumplings look like a mini bun featuring a very thin unleavened wrapper filled with soupy & tasty pork.
Unlike buns, which use yeast to proof the flour to make fluffy wrappers, Shanghai soup dumplings use normal dumpling wrappers made of flour, water, and a bit of salt.

How to Wrap Shanghai Soup Dumplings Step 1 is to hold the wrapper and add the filling
Place one wrapper in the middle of the left hand, or the less dominant hand, and add about 2 tsp fillings in the middle of the wrapper. You want to add ample filling so that the soup dumplings taste deliciously meaty. However, you do want to leave enough room for the wrapping.
When visualizing the round wrap with a circle of filling in the middle, the diameter of the filling circle should take up about half of the wrapper’s diameter. In other words, you have around 1/3 of the wrapper around the filling to work with.
Step 2 is to pleat and pinch the wrapper
Start from the top right corner, while your left hand (less dominant) loosely holds the wrapper with the filling, your right hand (dominant) pleat and pinch the wrapper at the same time.
How to Wrap Shanghai Soup Dumplings Step 3 is to rotate the dumpling and continue to pleat & pinch
Continue to pleat & pinch counter-clockwise. When you are almost halfway through, rotate the wrapper on your left hand clockwise. This way, it is easier for your right hand to fold the remaining wrapper.
Next is to continue to pleat & pinch in full circle
Continue to pleat while pinching together the wrapper around the outer edge of the wrapper.
Along the way, use your left thumb to help keep the fillings inside the wrapper.
Until you have made the round trip, have reached the other side of where you started, and have formed a small opening on the top.
Wrap Shanghai Soup Dumplings Step 5 is to close out the small opening on the top
Use your right hand finger tips to pleat and pinch the edge of the small opening continuously in a circular motion. This will help close/seal the small opening gradually and leave a tiny round tip on the bun.
