Why coconut oil is perfect for Greek Yogurt Chocolate Frosting?

Coconut oil is nutritiously delicious and has a pleasant aroma. It also has an extremely high smoking point.

Unlike butter, which becomes soft over time even at a room temperature of around 60 degrees Fahrenheit {16 degrees Celsius}, coconut oil stays completely solid until the temperature rises to above 70 degrees Fahrenheit (21 degrees Celsius}. This ensures the frosting will stay in shape at room temperature.
