We sear the whole squid first before slicing it into bite sizes for stir fry. Therefore, the squid has this satisfying firm bite texture, just like your favorite Asian-style grilled squid. Such a healthy way of enjoying nutritious squid.
Traditional Squid Rolls {Flowers} vs. Squid Rings Stir Fry
If you like traditional Chinese Squid Rolls {Flowers}, or You Yu Juan {鱿鱼卷} or You Yu Hua {鱿鱼花}, then score the squid into a diamond-shaped lattice pattern and cut it into bite-size rectangles. The squid piece will curl inward into a roll with the lattice pattern exposed.

What do you need to make a delicious Stir Fried Squid Asian Grill Style?

Green onion, ginger, and garlic are traditional Chinese cooking herbs, popular to use three together to create this delicious aroma and taste. They are also superfood herbs that provide amazing health benefits.
Tips – get the organic ginger, green onion, and garlic if you can. They taste so much better and are healthier. Organic ginger is much smaller compared to the regular version, with a much more pigmented golden yellow hue and a stronger pleasant smell and taste.
For seasoning and flavoring, a pinch of cumin powder, a tiny bit of Himalayan pink salt, and a splash of sake and soy sauce work magically together. A tiny bit of sugar to complement soy sauce to make the flavor pop. I add 1 tsp naturally aged soy sauce, or dark soy sauce, to the 2 tbsp light soy sauce for a more desirable color.
Red onion and celery are superfood vegetables that also add additional texture and taste. Cut the red onion into thin rings and slice the celery into thin layers using an angle cut.
This is the same technique as how we slice the napa cabbage for Stir-Fried Napa Cabbage with vinegar sauce, a classic Beijing-style dish.
Besides celery, long green peppers are another wonderful green vegetable for this stir fry squid recipe.
Last but not least, if you happen to have some chives or young garlic leaves, add a small bunch. They add a accent beautiful dark green color and additional flavor and texture.
How to make a Stir Fried Squid Asian Grill Style easy and tasty?
Tip No.1 is to get the whole squid and clean it at home if you can
It is actually easier than you think to clean the whole squid at home. If they are in a frozen state, like those in my neighborhood Korean grocery store, simply leave them in a leakproof bag or container in the fridge and let them thaw thoroughly first.
Tip No.2 is to sear the whole squid first before slicing it into thin rings
It is much easier to slice the squid into thin rings after searing the squid. In addition, the searing method also locks in the moisture in the squid, which makes the squid tastes softer and tender.
Heat a hard anodized non-stick pan for 1 minute at medium heat, and spray a tiny of cooking oil using a homemade oil sprayer. Add chopped green onion, sliced ginger and minced garlic, along with cleaned whole squid. Cook for 2 minutes. Flip the squid and cook for another 2 minutes.
Wait for the squid to cool down a little and then slice the body tube into thin rings and cut to separate the tentacles.
Last but not least is to stir fry squid first and add vegetables later
You can either continue using the hard anodized frying pan for the stir fry or use a wok. The advantage of using a wok is that It gives you more room to maneuver.
Heat the cast iron wok at medium-high for 2 minutes, add about 2 tbsp avocado oil, using a silicone spatula to spread out evenly along the inside of the wok, and add the sliced squid rings and tentacles.
Toss and mix the squid using a pair of bamboo or wooden spatulas for about 3 minutes and then sprinkle 1/2 tsp cumin and toss and mix well.
Pour the stir fry sauce made of sake, soy sauce and sugar in a circular motion on top of the squid and then toss and mix well.
Finally, add the sliced celery and red onion, sprinkle 1/4 tsp salt on top of the vegetables, and continue to toss and mix for about 2 minutes.
All done! Enjoy a naturally delicious stir-fried squid with red onion and celery.

Squid Rings Stir Fry Recipe {Asian Grill Style 铁板鱿鱼Tie Ban You Yu}

Ingredients
- 2 whole squid
- 2 tbsp avocado oil
- 2 stalks of green onion, chopped
- 1 small piece of ginger, about 10 g, organic preferred, thin sliced
- 4 garlic cloves, thin sliced or minced
- A small bunch of chives or young garlic leaves, optional
- 1/4 tsp Himalayan pink salt
- 5 oz celery or long green peppers, see notes
- 4 oz red onion, thinly sliced rings
- 1/2 tsp cumin powder
For Stir Fry Sauce:
- 1 tbsp sake
- 1 tsp naturally aged soy sauce or dark soy sauce
- 2 tbsp light soy sauce
- 1/4 tsp cane sugar, organic unrefined preferred
Instructions
Prepare the Ingredients:
- If you are getting frozen whole squid, place them in a leakproof bag or container and leave them in the refrigerator for them to thaw thoroughly.
- Clean the whole squid starting by pulling the heat part out and getting rid of the innards. Then peel the skin off. Read here for a detailed step-by-step tutorial.
- Gather ingredients. Mince garlic. Cut the red onion into thin rings and slice the celery into thin layers using an angle cut. Add sake, soy sauce, light soy sauce and sugar into a small bowl and whisk well.
Sear the Squid:
- Turn the heat to medium-high and heat a 12-inch hard anodized fry pan for 1 minute.
- Spray 1 tiny bit of avocado oil onto the frying pan evenly, use a small silicone spatula to spread out evenly, and add sliced ginger, chopped green onion and minced garlic, along with the cleaned squid and tentacles.
- Gently press down and cook for 2 minutes. Flip the squid and cook for another 2 minutes.
- Turn off the heat and remove the squid from the pan and set it aside and wait for it to cool down enough for you to be able to slice it into rings.
- Slice the squid tube into thin rings and cut to separate the tentacles.
Stir Fry Squid:
- Turn the heat back to medium-high and heat the frying pan or a cast iron wok for 2 minutes.
- Add the rest of the 2 tbsp avocado oil to the pan, spread out evenly using a silicone spatula, and add squid rings and tentacles, along with the green onion, ginger, and garlic from the searing process. Toss and turn using a pair of bamboo or wooden spatulas for about 5 minutes. Sprinkle 1/2 tsp cumin, toss and mix well.
- Pour in the stir-fry sauce made of sake, naturally aged soy sauce, light soy sauce, and a tiny bit of sugar. Use a mini silicone spatula to scrape the bowl if needed. Use a slotted turner to fold into the squid and mix well, about 1 minute.
- Add chives or young garlic leaves here if you use either, along with celery and red onion, sprinkle 1/4 tsp salt and toss & mix using the pair of bamboo spatulas for another 2 minutes.
- All done! Enjoy naturally delicious stir-fried squid rings and tentacles.
Notes
- Either long green pepper or celery works well for Squid stir, along with the red onion. The combined vegetable should weigh just a little over a half pound.
