Making the Dough for Homemade Sandwich Bread

A stand mixer is a handy tool for making dough. Place the mixer on the kitchen scale, measure & add 660 g of all-purpose flour, 60 g avocado oil, and 1 1/2 tsp Himalayan pink salt. Add 4 tsp active dry yeast to a small bowl, and another bigger bowl to hold 360 g water.

Add some water from the bowl to the bowl holding active dry yeast. Mix well until it turns into a smooth paste. This is an important step if you use active dry yeast.

Add the yeast paste to the mixer, along with the water. Use a silicon spatula to generally mix everything and then attach the dough hook, set it on low, and run for a few minutes, until the dough is soft and smooth.

The dough needs to be super soft.

Let the Dough Rise in the Loaf Pan

This recipe makes two loaves of bread. Grease the glass loaf pan with coconut oil. Divide the dough into two equal portions.

For each portion, knead and fold the dough into a roll and place it into the previously greased loaf pan.

Place the loaf pans in an enclosed area, such as oven, and let it rise until it doubles its size. This takes about 2 hours, depending on the temperature of the environment.

Preheat the oven and bake

Preheat the oven to 375 F {190 C} and bake for 35 minutes in the middle rack.

  • Remove the dough from the oven and preheat the oven to 375 F {190 C}, then add the proofed loaves to the middle rack and bake for 35 minutes. Then turn off the oven and let the loaves cool down on a wired rack.

  • As soon as the glass baking pan is cooled down enough and OK to touch, gently remove the bread from the baking pan and let it continue to cool on the wired rack. Enjoy a healthy & yummy homemade sandwich bread.
