What is Lu Rou Fan?

Lu Rou translates as braised meat (pork), Fan means rice. Lu Rou Ran refers to braised pork belly sauce poured over a bed of freshly steamed rice. It is especially popular in Taiwan. Typically, it is served along with blanched split bok choy and braised hard boiled egg.

I prefer to mix Lu Rou Sauce with pan fried vegetables to cut down the greasiness of the pork belly.

You will need pork belly, Shaoxing Wine, regular soy sauce, light soy sauce, red yeast rice powder, cinnamon powder, clove powder and arrowroot flour. Just to name some essential ingredients.

Make this in advance and store in the refrigerator for up to one week.

How to cook vegetables before mixing with Lu Rou Sauce?

The first step is to cut vegetables into small cubes, or bite-size lengths

Wash, clean and rinse all vegetables first. Some vegetables such as potatoes and carrots require blanching to cook them first.

The Second is to blanch to cook potatoes and carrots

The Third is to stir fry vegetables together

Stir-fry leek greens and red onion pieces for about 30 seconds and then add blanched potatoes and carrots and stir-fry for another 30 seconds.

Lu Rou Fan Recipe {Tasty Healthy Braised Pork Belly Rice Bowl}

Ingredients

For Lu Rou Sauce:

  • 2 lb pork belly, sliced pork belly preferred for easy prep
  • 1 tsp canola oil
  • 4 tbsp Shaoxing wine
  • 2 stalks of Green Onions
  • 1 small piece of ginger, about 10 grams
  • 3 tbsp regular soy sauce
  • 3 tbsp light soy sauce
  • 1/2 tsp white pepper, freshly ground
  • 1/2 tsp Red Yeast Rice powder
  • 1/4 tsp Cinnamon Powder
  • 1/4 tsp Clove Powder
  • 1 tbsp Arrowroot flour
  • 1 tbsp sugar, preferably sugar in the raw
  • 1 1/2 cup of water

For Additional Vegetables:

  • 1/2 tsp canola oil
  • 8 small round potatoes, about 10 oz
  • half red onion, about 7 oz
  • 5 oz leek green, tender, see notes
  • 3 small carrots, about 6 oz

Instructions

Prep Vegetables:

  1. Wash and rinse well leek, carrots, potatoes and red onion. Peel carrots and trim the ends off. Trim off red onion ends and peel off outer layer.

  2. Cut potatoes and carrots into small cubes, and leek greens and red onions into bite-size lengths.

  3. Fill a 4 Qt. stockpot with about 75% water, turn the heat to medium-high and bring it to a boil, about 10 minutes.
  4. Add carrots and potatoes, stir to mix well with water and bring it to boil again. Turn to simmer and cook for 10 minutes.
  5. Turn off the heat, remove carrots and potatoes cubes from the pot using a spider skimmer, and place onto a plate.

Stir Fry Vegetables:

  1. Turn the heat to medium-high and heat a deep fry-pan for about 2 minutes.
  2. Add 1/2 tsp cooking oil and then add leek and red onion slices. Stir fry for about 30 seconds or till fragrant.
  3. Add the blanched carrots and potatoes, stir fry for another 30 seconds.

Serve Lu Rou Fan {Braised Pork Belly Rice Bowl}:

  1. Add about 1 cup freshly steamed rice into a bowl first. Then add about 1 cup of the stir fried vegetables plus 1 cup of Lu Rou Sauce, and fold and mix.
  2. All done! Enjoy a tasty healthy rice bowl!
