How to make roasted grains via stovetop using wok?

The First step is to wash and rinse the grains

I am roasting hard winter white wheat today. Place 2 pounds of white wheat berries into a strainer, wash and rinse well under the running water. Rest the strainer over a pot or saucepan and let the grains air dry. Fold and mix from time to time for quicker air dry process.

The Second is to heat a wok first for roasted grains

Turn the heat to medium and heat a wok for 2 minutes.

The Third is to toast grains on medium heat

Add the air dried and cleaned grains into the wok, use a wooden turner to fold and mix for about 3 minutes.

The Fourth is to roast grains in a thin layer on low heat

Spread grains in thin layers in the wok to roast at low heat

Turn the heat to low. Use the wooden turner to push and spread out the grains along the surface into a thin layer and let it cook for 3 minutes. After that, fold and mix for about 15 seconds and then spread out the grains again into a thin layer and let it cook for additional 3 minutes.

Repeat this for another 7 times. Grains may start to pop in the wok after about 20 minutes.

By the way, this works very well for multi-tasking . For example, when you are prepping a meal in the kitchen, you can roast some grains at the same time. All you need to do is to fold and mix, and then spread out into thin layer every 3 minutes.

The Fifth is to continue to roast in a thin layer on simmer

Turn the heat to simmer, and use the similar method as before. Fold and mix the grains using a wooden turner for about 15 seconds. Then spread out the grains into a thin layer and let them cook for 3 minutes. Repeat for 3 times.

Last but not least, wait for the grains to cool down and store in air-tight glass jars for daily use

All done! Grains are fully cooked. Let the grains cool down to room temperature and then store in air-tight glass jars for daily use. They can last at least 6 months, if not longer.
