We call Tofu Skin, also known as soybean curd sticks, Fu Zhu {腐竹} in Chinese. Fu Zhu {腐竹} literally means Tofu Bamboo, implying the dried soybean curd sticks look like miniature bamboo.

Soak the dried tofu skin with plenty of water in a large washing basin 4-6 hours prior to cooking and let them fully rehydrate.

Bring a large stockpot( 8 Qt. or larger) filled with about 6 Qt. of water and bring it to a boil. Then add the rehydrated tofu skin slices. Stir and mix well. Add the lid and bring to a boil again. After that, turn the heat to simmer and cook for 5 minutes.

Blanching helps soften the tofu skin and makes the stir fry tastier.

Turn the heat to medium-high and heat the wok for 2 minutes. Spry about 1 tbsp avocado oil into the wok using a homemade oil sprayer and then add chopped green onions. Stir and fold for about 10 seconds.

Then add blanched tofu skin slices, squash slices, chopped seafood mushroom, and Goji berries with the soaking water into the wok, stir and fold for about 1 minute. Add salt, freshly ground white pepper, and light soy sauce, and continue to stir and fold using a slotted turner for another minute.

  • 6 Qt. of water, for blanching rehydrated Tofu skin
  • 2 squashes, tender and green
  • 1 pack of fresh seafood mushroom, about 150 gram
  • 2 tbsp Goji berries, dried
  • 1 tbsp avocado oil
  • 1 stalk of green onion, chopped
  • 1/2 tsp Himalayan pink salt
  • 1/2 tsp white pepper, freshly ground
  • 1 tbsp light soy sauce
