Danish Butter Cookies Qu Qi Bing Gan {曲奇饼干} was one of the most popular cookies when I grew up in China. Ever since it has been one of my favorite cookies.
Making the dough for Danish Butter Cookies is pretty straightforward. The most tricky and time-consuming step is piping. Often, I just take the shortcut and press the cookies instead. Especially when I add the coconut flakes to the dough to have the coconut butter cookies.

How to make the dough quick & easy for perfect Danish butter cookies?
Tip No.1 is to melt the butter in the microwave to reach a half-liquid and half-softened state
Need to melt the butter sufficiently enough so that it will blend the solid ingredients such as flour. However, you do not want them to turn into liquid completely.
By the way, a nice set of Pyrex glass mixing bowls is very handy in making cookies. I simply put the butter in the largest glass mixing bowl and put it in the microwave to soften the butter.

Tip No.2 is to add a small portion of almond flour
Blanched almond flour is not only nutritious but also adds crumbly yumminess to the cookies.

Danish Butter Cookies using simple whole ingredients made easy at home. Either using a piping or not.
Ingredients
- 160 g butter, organic preferred
- 190 g all purpose flour, organic preferred
- 50 g blanched almond flour
- 50 g heavy cream or 1 egg
- 90 g cane sugar, organic unrefined preferred
- 1/2 tsp salt, such as Himalayan pink salt
- 1/2 tsp vanilla extract, optional
- 1/2 cup organic coconut flakes, optional
Instructions
- Gather ingredients. Place the butter in a large glass mixing bowl and put it into the microwave for about 30 seconds or till it melts half of the butter.
- Use a hand-held mixer to beat the butter till smooth, gradually add the sugar little by little while beating till smooth.
- Either add the heavy cream or egg to the mixture and continue to beat until the whole thing is light and fluffy.
- Sift the flour, almond flour, and salt and fold into the wet mixture. Continue to fold until smooth. Fold into the coconut flakes if you'd like that.
- At this point, you can either use the traditional piping bag or take the shortcut by scooping out about a tbsp of cookie dough at a time and placing it on the unbleached parchment paper. Make sure there is enough space between to press the cookies.
- Organize each portion into a round ball and use a fork to press. Then use a thick chopsticks poke in the middle and turn in one direction to make a hole in the middle.
- Preheat the oven to 375 F and cook for 15 minutes in the middle rack. All done! Enjoy a yummy and healthy cookies.
