How to prepare beet for a beet salad?
Preparing the beet for a salad is plain and simple. Trim both ends off and then peel the beet using a peeler. Cut the peeled beet into bite-size chunks and add them to a saucepan. Add enough water to barely cover the beet and bring it to a boil. After the water reaches a boil, turn the heat to simmer and cook for 20 minutes. That’s it.
Remove the beet chunks from the pan using a stainless steel skimmer. Do not waste the juice left behind. I usually drink it as a beet juice tea.
Easy Beet Salad Recipe {Yummy & Light}
Beet Salad featuring apple cider vinegar, hemp seed oil, coriander, and fennel seeds is refreshingly yummy.
Ingredients
- 1.5 lb beet, trimmed and peeled
- 2 tbsp apple cider vinegar, organic preferred
- 2 tbsp hemp seed oil, organic cold-pressed preferred, or extra virgin olive oil
- 1/4 tsp coriander seed powder, freshly ground
- 1/4 tsp fennel seed powder, freshly ground
- 1/4 tsp salt, Himalayan pink salt, or sea salt
- 1 stalk of green onion, finely chopped
Instructions
- Gather ingredients. Wash and rinse beet well, trim both ends off, peel and then cut into bite-size chunks.
- Add beet chunks into a saucepan, and add just enough water to cover the beet, about 3 cups. Turn the heat to medium-high and bring it to a boil, about 5 minutes.
- Once reaching a boil, turn the heat to simmer and cook for 20 minutes. Turn off the heat, and remove the beet from the saucepan using a stainless steel skimmer.
- Add the beet chunks into a salad mixing bowl, add hemp seed oil, apple cider vinegar, coriander seed powder, fennel seed powder, salt and chopped green onion.
- Toss the salad using a pair of bamboo spatulas to mix well. Enjoy a yummy and healthy Beet Salad.
Notes
Hemp seed oil is an amazing superfood nutritious oil that has a beautiful dark green hue and nutty flavor, which complement beet very well. You can use extra virgin olive oil if you do not have hemp seed oil. By the way, I use the same organic cold-pressed hemp seed oil for my anti-aging serum.
A spice/coffee grinder is a very handy tool to grind the wholesome spices into powder.
